Chitin, a polymer of GlnNAc, are found in fungi, algae, and insects. Chitinases catalyse the hydrolysis of chitin. Chitinases are not found in mammals and are therefore specific targets for fungicides and insecticides. There are six chitinase inhibitors that occur naturally, of which allosamidin is the most potent and widely studied.
